Cheese Scones - Recipe from Julie Buckley

I'm a chef and I have to admit I love baking. It took a long time to get used to not using wheat or even gluten-free flour in my baking because every time I ate it I felt yuk!
I still love baking and creating tasty food that is also healthy. Hopefully, you enjoy these cheese scones as much as I do. They are great for morning or afternoon tea or use them as a roll to fill with your favorite sandwich fillings.

Cheese Scones

Makes 12 scones
1c ground almonds
½ c ground flaxseed
3 Tbsp psyllium husks
3 Tbsp coconut flour
1 tsp baking powder
½ tsp salt
Pinch cayenne pepper
1 ½ c grated cheese
3 eggs
½ c milk
½ c cream cheese

Preheat the oven to 180 degrees Celcius. Mix all of the dry ingredients together in a bowl. Soften the cream cheese and beat in the eggs one at a time. Stir in the milk and fold into the dry ingredients.

Spoon heaped tablespoons of the mixture onto a baking tray leaving space for them to spread a little.

Bake for 12 minutes or until puffed and golden.
